The following menus are derived from events we have catered recently. Please note that the price is based on the menu only, and does not include service staff, rentals, gratuity, tax, or any pertinent facility fees.


Holiday Party


Menu Style:  "Heavy Hors D'oeuvres"

Theme:  None, Food has a Southwestern Feel

Passed Hors D’oeuvres

  • Smoked turkey “Reuben” empanadas
  • Southwestern vegetarian quesadillas
  • Spicy pork and peanut soup “shots”

Hors D’Oeuvre Buffet Table

 
  • Southwestern beef brisket with a chipotle barbecue sauce, sliced and served warm with a red and green homemade cole slaw and small buns
  • Duo of dips served with tortilla chips:
     
    • Hot baked Mexican spinach dip
    • Guacamole

  • Asparagus, baby new potatoes, carrots and cucumbers with a roasted red pepper/sun-dried tomato dip
  • Crisp phyllo strudels with bacon, dates, chevre and scallions, served warm cut in slices
  • Winter fruit presentation with a wedge of bleu cheese
 

Dessert Pastries

  • Sarah Bernhardts (almond macaroons with a chocolate ganache “kiss”, dipped in dark chocolate
  • Small tartlets filled with vanilla pastry cream and topped with a strawberry sliver

 


Late Summer Wedding Buffet Featuring Local, Seasonal Ingredients

Menu StyleTwo buffet stations, one offering traditional fare and one with an ethnic feel

Pre-Dinner Passed Hors D’Oeuvres

 

  • Crostini with local chevre cheese and tiny diced golden beets with a touch of balsamic, served cold
  • A Wedding Toast:  small shots of a champagne-touched cool berry "soup"
  • Cornmeal tartlets with fresh spinach, leek, and locally made Emmanthaler, served warm

 

Traditional Dinner Buffet

 

  • Fresh-herb-marinated beef tenderloin, roasted rare, sliced, and served at room temperature with an apple horseradish sauce and a lemon-garlic aioli
  • Baskets of Manna’s fresh cocktail sandwich rolls to accompany beef
  • Caprese salad with farmer’s market tomatoes and fresh mozzarella, basil, and a drizzle of balsamic reduction
  • Local fingerling potato and sweet potato salad with a lemon, garlic, olive oil and fresh herb dressing
  • Salad of fresh corn from the cob, roasted red peppers, scallions, and a light dressing
  • “Lover’s Salad” of Mesclun greens, berries, avocado, spiced pecans, and a “sweet/spicy” dressing

“Ethnic” Food Dinner Buffet

  • Ginger-soy-marinated chicken breasts, roasted. sliced, and served at room temperature with a choice of two spicy sauces:
    • Indonesian peanut sauce
    • Warm Thai red curry coconut sauce
     
  • Udon noodle salad with sugar snaps, scallions, red peppers, and a tahini dressing
  • Crisp green bean tossed with a light orange, shallot, and cumin dressing
  • Couscous salad with light curry dressing, dried cranberries and toasted almonds
  • Homemade hummus with crisp cucumbers and a bounty of colored peppers
  • Baskets of pita and naan bread to accompany table items

  • Roasted asparagus spears with Hollandaise dip

Theme:  Summer garden harvest

  • Lemon-garlic roasted chicken breast on Manna’s rustic French bread with arugula aioli, farmer’s market tomatoes, grated parmesan cheese and balsamic reduction; two potato salad with fresh garden herbs, lemon and olive oil; mint petit four brownie     $9.95
  • Crisp garden vegetables (thinly sliced cucumber, yellow squash, red onion, alfalfa sprouts) and herbed cream cheese on Manna’s multigrain bread; couscous salad with toasted almonds, cranberries, and light curry dressing; oatmeal cranberry cookie     $7.95
  • Country Turkey Salad:  chunks of roast turkey, crisp apples and celery, dried cherries, smoky gouda cheese, in a light honey curry dressing on romaine leaves; Challah roll; white chocolate, almond oatmeal bar     $8.95
