Manna specializes in catering "substantial hors d'oeuvres buffets," where satisfying meals are made up of a collection of small or medium-sized items.  We find this approach allows for lots of variety on the table, as well as more opportunity for beautiful presentation, compared to a format of hot entrees and side dishes served up in a line of chafer dishes.

Most of the dishes listed below are served at room temperature or cold, unless otherwise noted. They are meant to be the central, or focal part of a meal made up of many different items, such as finger hors d'oeuvres, salads, dips, and warm items.


Roast Beef Tenderloin
Marinated whole tenderloins are roasted medium to medium rare, cooled, and sliced. They are served as described, with French bread baguettes or small rolls

  • Traditional: Marinated in rosemary, thyme, cracked pepper and garlic. Served with a slightly spicy apple, mustard, and horseradish sauce.
  • Smoky Southwestern: Marinated in a chipotle pepper, garlic, and olive oil blend. Served with fresh tomato salsa.
  • Bahn Mi:  Marinated in a soy-honey dressing with sweet spices, roasted rare, sliced, and served with a spicy cucumber and pickled ginger relish.

Red-wine Braised Beef Brisket (served warm)
Our beef brisket is slow roasted in a rich red wine sauce for hours, then sliced and served hot with French baguettes and a chive horseradish sauce.

Pulled Pork Roast (served warm)
We slather a pork roast in spices and roast it overnight, then create succulent chunks of meat in a tangy sauce made from the drippings.  Served with buttermilk white bread and our homemade, colorful cole slaw.

Pork Tenderloin Platters
Choose one of three wonderful preparations of whole roasted tenderloin served in thick slices.

  • Herb-crusted: A simple but incredibly fragrant blend of thyme, rosemary and garlic. Served with onion potato bread and herbed butter.
  • Southwestern Spice Chili Rub: Roasted in a thick coating of spices, garlic and lime juice. Served with cheddar corn bread.
  • Wisconsin Cinnamon Applesauce: A traditional combination of pork and apples rolled into one. The pork gets a savory dry rub, and finishes roasting with a sweet topping. Served with dark rye bread.

Roasted Chicken Breast Platters
Oven-roasted boneless breasts are sliced and served with appropriate accompaniments.

  • Jamaican Chicken: Chicken breasts marinated in authentic Jamaican jerk seasonings, then roasted to create a spicy and irresistible flavor. Served with tropical fruit salsa and cocktail rolls.
  • Southwestern: Lime, garlic and cumin flavors highlight this version, which is served with cornbread and accompanied by salsa and sour cream
  • Simply Sauced: The chicken is roasted with a simple marinade. Served with cocktail rolls and your choice of two sauces: roasted red pepper and sun dried tomato, spicy peanut, aioli, strawberry rhubarb chutney, or tarragon vinaigrette.

New York Deli Sampler
A selection of house-roasted meats, traditional deli-style cold cuts and sliced cheeses from which guests can make their own small sandwiches on homemade breads. Choice of two or three meats, two cheeses, and bread.

Poached Fresh Salmon: Traditional or Tropical
Presented with fresh flowers and served with your choice of a cucumber dill sauce or a tropical fruit salsa (really good!)

Presented with fresh flowers, homemade black bread rounds, and dill cream cheese with red onions.

Cheese and Fruit Cascade
We combine whole and cut cheeses with seasonal fruits to create a table centerpiece with height and flow. Loaves of homemade breads accent this presentation.

A colorful melange of Italian sausage and cheeses, marinated artichokes, tomatoes, black and green olives, roasted red pepper strips and garlic foccacia bread.

Jewish Favorites
This centerpiece offers traditional items for cold buffets. Included are lox, smoked salmon, herring, egg salad, bagels, cream cheese and condiments such as sliced tomatoes and red onion.
